Food regulations, food standards, and the rules regarding labelling of food are constantly being updated and reviewed. Most countries have their own specific requirements, so it is very important to insure that practices conform to the requirements of the production area as well as the requirements of the country for which the product is destined. This chapter gives a brief outline of what is required and uses examples from mainly the US, which may or may not be relevant to the specific factory and product under review. Nevertheless, it is the responsibility of the food producer/cannery operator to insure that he or she is aware of the many requirements of the business and that he/she complies with these requirements. This chapter gives a good indication of the types of issues covered by food law and some examples of what a food processor can expect to encounter.
